Today is Cinco de Mayo, and while
we don't really celebrate this day; it is a great day to
eat out at a Mexican restaurant and
listen to Selena, Linda Ronstadt, the Coco soundtrack,
and other Hispanic music that reminds Christian
of working as a teenager in Arizona at his dad's truss plant.
Cinco De Mayo is also a great day for me to make the famous
Mexican chocolate cake made with
balsamic vinegar and cayenne pepper that I've been making
for many, many Cinco de Mayo's.
When Christian and I lived in Mesa, we used to really celebrate
this is a fun holiday because the community celebrates it!
But it's kind of slacked off as the years go on.
