Our Cinco de Mayo Party was a "hit" gaa ga ga.
Reachel helping herself to a healthy scoop of Vanilla bean ice cream to top the hot Mexican Chocolate cake! (thanks for using the napkins Reachel)

Notice Claire's hand on that bottle. It NEVER left her sight.
Mexican Chocolate Cake:

3 cups flour
2 cups sugar
1 tsp salt
6 Tbsp cocoa powder
2 tsp cinnamon
1/2 tsp cayenne pepper
(mix ingredients together)
1/2 cup canola oil
1/2 cup mayonnaise
2 tsp Mexican vanilla
2 tsp vinegar
2 cups cold water

Mix well. Bake at 350 for 25-30 minutes

makes two basic circular cakes. I layered mine adding chocolate sauce (as follows)

1 cup semi sweet chocolates
1/4 canola oil
1/4 heavy whipping cream

add strawberries and cream and you have one hot cake!
